Orange and Cranberry Granola

 Makes about 8 cups

  • ½ cup cold-pressed coconut oil 
  • 6 cups rolled oats, gluten-free
  •  4 Tbsp ground flaxseeds 
  • 2/ 3 cup pure maple syrup
  •  1 ½ cups chopped pecans 
  • 1 cup naturally dried cranberries (no sugar and artificial sweetener)
  •  2 oranges, washed thoroughly


Set the oven to 300 degrees F. 
Combine the ground flaxseeds and oats in a bowl. Set aside.
 Pour the coconut oil and maple syrup into a saucepan. Zest the oranges and stir the zest into the oil mixture. Halve the oranges and squeezed 4 tablespoons of juice from them. Stir the juice into the mixture. 
Mix everything over low flame until thoroughly combined, then pour the mixture over the flaxseed and oat mixture. Mix well
. Bake the mixture for 15 minutes, then stir well to heat evenly. Bake for an additional 15 minutes. 
Add the cranberries and pecans, then stir and bake for 5 minutes or until the oats are golden brown.
 Place on a cooling rack and store in an airtight container for up to 3 days at room temperature.
